Strawberry Chia Pudding Recipe
This delicious and healthy superfood pudding recipe was both dessert last night and breakfast this morning. It's not too sweet for the morning but tasty enough to satisfy any late night cravings for tasty treats.
This is a perfect summer morning meal and you can add sliced strawberries, bananas or nuts as toppings to enhance it how you desire.
You can also fill up your mason jar with chia pudding and take it with you on the trails or the park for busy summer days. It makes a great on-the-go meal!
Chia seeds are very high in protein, as well as calcium and omega-3 fatty acids. Long before the chia pet became popular from TV commercials, chia seeds were highly valued for their nutritious nature in Aztec, Incan and Mayan cultures and were even used as currency.
Try them and see how delicious and filling they are.
Strawberry Chia Pudding
- 2 c. raw grass-fed milk (you could use coconut, almond, or hemp milk instead)
- 1 organic banana
- 1 c. organic strawberries
- 2 T. maple syrup
- 2 T. hemp seeds (raw shelled) (find it here)
- 1 t. maca (find it here)
- 6 T. chia seeds (find it here)
Blend all the ingredients together except for the chia seeds. Pour the pudding base into a large mason jar or bowl. Add the chia seeds to the blended base, stir and let sit overnight in the fridge covered. In the morning, stir again (or shake if it's in a mason jar with a lid), pour into bowls and add sliced strawberries, bananas, nuts, or eat plain. Or just take the jar with you out to the lakes, trails, office or playground.
